Pistachio-Herb Crusted Lamb

Ingredients:

  • 1 rack of 8 lamb ribs, frenched bones
  • 2 Tbsp dijon mustard
  • 1/4 cup breadcrumbs
  • 1/4 cup pistachios, finely chopped
  • 2 Tbsp fresh parsley, finely chopped
  • 2 Tbsp fresh rosemary, finely chopped
  • 1 tsp crushed garlic
  • 2 Tbsp Mazola Canola Oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 375F. Score the lamb on the fat side and season with salt and pepper. Heat 1 Tbsp canola oil in a large pan on medium-high heat and sear the lamb on both sides for 2-3 minutes. Remove and let cool slightly.
  2. Mix together the breadcrumbs, herbs, pistachios, garlic, salt, pepper, and 1 Tbsp Mazola Canola Oil. Spread the mustard over both sides of the lamb then coat evenly with pistachio-herb mixture.
  3. Bake in the preheated oven for 20-25 minutes, or until a thermometer inserted into the thickest part reads 135F. Remove from the oven and let rest for 10 minutes before slicing between the rib bones to serve.
