Chicken & Mushroom Dumplings

With Mazola® Canola Oil

Ingredients:

  • 1 lb. ground chicken
  • 1 small onion, finely chopped
  • 2 green onions, finely chopped
  • 1 ½ cups of shiitake mushrooms, finely chopped
  • 2 cloves of garlic, minced
  • ½ tbsp of fresh ginger, minced
  • 2 tsp. of sesame oil
  • 3 tbsp of soy sauce
  • 1 tsp of sugar
  • 2 tbls of shaoxing wine or dry cooking sherry
  • ¼ tsp of black pepper
  • 2 tbsp of Mazola Canola Oil
  • 40 round wonton wrappers

DIPPING SAUCE:

  • ¼ cup of low sodium soy sauce
  • 1 tbsp of rice wine vinegar
  • 1 tbsp of sesame oil
  • 1 tsp of sugar
  • toasted sesame seeds for garnish

Instructions:

  1. Heat oil in a large pan over medium heat.
  2. Add the onion and cook until translucent. Thenadd the mushrooms, garlic and ginger and cook for 8-10 minutes. Add green onions and cook for another minute.
  3. Transfer to a medium sized bowl and let cool.
  4. Once cooled, add the ground chicken, sesame oil, soy sauce, sugar and shaoxing wine, black pepper and gently mix until thoroughly combined.
  5. Place some water in a small bowl. Working with 1 wonton wrapper at a time, spoon approximately 1 tablespoon of filling into thecentre of the wrapper. Dab your finger into the bowl of water and brush your finger around the edge of the wrapper. Fold one side of the wrapper up and over the filling to create a half moon shape and pinch down the edge all along the crescent side to seal.
  6. If you would like a more decorative edge, you can pleat and pinch starting from the right corner towards the middle and repeat on the left corner towards the middle.
  7. Repeat for remaining wrappers.
  8. Heat 2 tablespoons of oil in a large pan over medium heat. Cook dumplings in batches. Add dumplings flat side down and cook until the bottom is golden brown.
  9. Carefully pour ¼ cup of water into the skillet, cover with lid and turn heat down to medium-low. Let steam for approx. 5 minutes or until the filling is completely cooked inside.
  10. Remove and keep warm and repeat the process for the remaining dumplings.
  11. While the dumplings are cooking, make the dipping sauce by combining all the ingredients in a small bowl. Garnish with sesame seeds.
  12. Serve the dumplings hot with the dipping sauce, your favourite chilli oil and garnish with chopped green onions and sesame seeds.
