Dutch Oven Banana Bread
With Mazola® Vegetable Oil

Ingredients:
- 4 large ripe bananas
- 2/3 cup brown sugar
- 1/2 cup Mazola Vegetable Oil
- 1 egg
- 1 tsp vanilla
- 1 1/2 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup dark chocolate chips
- 1/4 cup walnut pieces
Instructions:
- Start your fire about 45 minutes ahead of when you want to bake to have enough coal ready to cook with.
- Then mash the bananas in a large mixing bowl with cinnamon. Add Mazola Vegetable Oil, brown sugar, egg, and vanilla. Stir together well.
- Add the dry ingredients to the bowl and mix until just combined. Add chocolate chips and walnuts, if desired, and gently fold in. Pour into the dutch oven lined with parchment paper. Cover with the lid.
- Carefully remove 5-6 hot coals from the fire and place them on the ground in a safe location. Place the dutch oven over these coals. Then place ~12 hot coals on the lid of the dutch oven and bake for around 20-25 minutes until golden brown and cooked through. Let cool slightly before serving.
