Antipasto Skewers

Ingredients:
- 24 slices of genoa salami
- 12 mini bocconcini balls
- 6 artichoke hearts, cut in half
- 12 cherry tomatoes
HERB VINAGRETTE:
- ¾ cup of Mazola® Canola Olive Oil Blend
- ¼ cup of balsamic vinegar
- ½ tsp of fine sea salt
- ¼ tsp of black pepper
- ½ tsp of dijon mustard
- 1 tsp of honey
- 1 small garlic clove, finely minced
- 1 tsp of fresh chives, finely chopped
- 1 tsp of fresh basil, finely chopped
- 1 tsp of fresh parsley, finely chopped
Instructions:
- Set aside 12 wooden cocktail skewers.
- Fold the salami into quarter wedges and thread onto the skewer, followed by the artichoke heart, cheese, another salami and cherry tomato. Repeat for remaining skewers.
- Combine the herb vinaigrette ingredients in a bowl and whisk to combine.
- Brush the vinaigrette onto each skewer covering all ingredients.
- Plate and serve.
