Antipasto Skewers

Ingredients:

  • 24 slices of genoa salami
  • 12 mini bocconcini balls
  • 6 artichoke hearts, cut in half
  • 12 cherry tomatoes

HERB VINAGRETTE:

  • ¾ cup of Mazola® Canola Olive Oil Blend
  • ¼ cup of balsamic vinegar
  • ½ tsp of fine sea salt
  • ¼ tsp of black pepper
  • ½ tsp of dijon mustard
  • 1 tsp of honey
  • 1 small garlic clove, finely minced
  • 1 tsp of fresh chives, finely chopped
  • 1 tsp of fresh basil, finely chopped
  • 1 tsp of fresh parsley, finely chopped

Instructions:

  1. Set aside 12 wooden cocktail skewers.
  2. Fold the salami into quarter wedges and thread onto the skewer, followed by the artichoke heart, cheese, another salami and cherry tomato. Repeat for remaining skewers.
  3. Combine the herb vinaigrette ingredients in a bowl and whisk to combine.
  4. Brush the vinaigrette onto each skewer covering all ingredients.
  5. Plate and serve.
