Hot Honey Salmon Rice Bowls with Mango Avocado Salsa

Ingredients:

Salmon Rub:

  • 1-2lbs fresh salmon
  • 2 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked pepper
  • 2 Tbsp Mazola Corn Oil or olive oil

Mango Avocado Salsa:

  • 2 mangoes, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, diced
  • 1/4 cup red onion, diced
  • 1/2 jalapeno, diced
  • Juice from 2 limes
  • Salt to taste

Hot Honey:

  • 3 Tbsp honey
  • 1/2 tsp chili flakes
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika

The Rest:

  • 2-3 Tbsp Mazola Corn Oil, for frying
  • 2 cups cooked coconut rice

Instructions:

  1. Start by mixing together all the ingredients for the mango avocado salsa, set aside. Then mix together the salmon rub ingredients and spoon over the salmon.
  2. Heat Mazola Corn Oil in a pan until shimmering, then carefully fry salmon on both sides until cooked through.
  3. Assemble the bowl with coconut rice, the perfectly cooked salmon, fresh mango salsa, and hot honey to add a little kick.
