Prosciutto Wrapped Asparagus

Ingredients:

  • 1-1/2 pounds fresh asparagus, tough ends removed
  • 2 tablespoons Mazola® Canola Olive Blend
  • Salt and pepper to taste
  • 4 ounces very thinly sliced prosciutto (about 12 to 14 slices)

Instructions:

  1. Preheat grill or stove top grill pan to medium heat.
  2. Combine asparagus, olive oil, salt and pepper in a mixing bowl, stirring to coat evenly with oil. Grill for 1 to 2 minutes per side. Asparagus should be bright green and slightly shriveled on surface.
  3. Transfer cooked asparagus to a plate. Cool for 5 to 10 minutes or until comfortable to handle. Cut proscuitto slices in half. Tightly roll each asparagus spear with half a proscuitto slice. Arrange on serving plate and serve immediately.
  4. Serving Suggestions: Serve with thin slices of fresh cantaloupe, roasted red pepper dip or hummus.
