Breakfast Omelet Burrito

Ingredients:

  • 4 flour tortillas 
  • 1/4 cup Mazola® Canola Oil
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 1 cup chopped red onion 
  • 1 tablespoon garlic 
  • 8 eggs, beaten 
  • 1/2 cup Parmesan cheese 
  • Salt and pepper to taste

Instructions:

  1. If desired, lightly brush the tortillas with Mazola Canola Oil. Cook in a skillet, over medium-high heat for 30 seconds per side; set aside.
  2. Add Mazola® Canola Oil to skillet; saute bell peppers, onion and garlic 1 to 2 minutes. Pour beaten eggs over vegetable mixture. Cook for about 4 minutes, until eggs are softly set.
  3. Cut omelet into four pieces and place into prepared tortillas. Sprinkle with Parmesan cheese.
  4. Roll up and serve.

TIP: Serve burritos with Mexican salsa and guacamole.
