Breakfast Omelet Burrito
With Mazola® Canola Oil

Ingredients:
- 4 flour tortillas
- 1/4 cup Mazola® Canola Oil
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- 1 cup chopped red onion
- 1 tablespoon garlic
- 8 eggs, beaten
- 1/2 cup Parmesan cheese
- Salt and pepper to taste
Instructions:
- If desired, lightly brush the tortillas with Mazola Canola Oil. Cook in a skillet, over medium-high heat for 30 seconds per side; set aside.
- Add Mazola® Canola Oil to skillet; saute bell peppers, onion and garlic 1 to 2 minutes. Pour beaten eggs over vegetable mixture. Cook for about 4 minutes, until eggs are softly set.
- Cut omelet into four pieces and place into prepared tortillas. Sprinkle with Parmesan cheese.
- Roll up and serve.
TIP: Serve burritos with Mexican salsa and guacamole.
