Campfire Sticky Toffee Pudding
With Mazola® Vegetable Oil

Ingredients:
- 1 cup pitted dates, chopped finely soak in 1 cup boiling water
- 1/4 cup dark brown sugar
- 2 eggs
- 1/3 cup Mazola Vegetable Oil
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/4 cup all-purpose flour
- Ice cream, for serving
For The Sauce:
- 3/4 cup brown sugar
- 1/2 cup butter
- 1 cup heavy cream
- Pinch of salt
Instructions:
- Start by preparing your campfire ahead of time so that you have enough coals to cook with. You will need approximately 16 coals in total. Allow ~40 minutes for campfire prep.
- Soak chopped dates in the boiling water for at least 15 minutes to soften. Then add to a bowl and whisk with brown sugar, eggs, and Mazola Vegetable Oil.
- Add the salt, baking powder, baking soda, and flour and mix until just combined. Pour into a cast iron dutch oven lined with parchment paper and cover with the lid.
- Carefully remove 5 hot coals from the campfire and place on the ground, set the dutch oven on top of these coals. Now place 11 hot coals on the lid of the dutch oven and bake for ~20 minutes until golden brown. Make sure to check occasionally by removing the lid carefully, to ensure it doesn’t burn.
- In the meantime, prepare the sauce by simmering the butter, brown sugar, and half of the heavy cream over a low heat.
- Once all the sugar is dissolved, remove from the heat and add the rest of the heavy cream.
- Serve the warm cake with ice cream and the toffee sauce.
