Greek Chicken Patties Bowl

With Mazola® Corn Oil

Chicken Patties:

  • 1 lb ground chicken
  • ¾ cup breadcrumbs
  • 1 egg
  • 1 tbsp fresh dill or 1 tsp dried
  • 1.5 tsp dried oregano
  • 1 tsp dried mint (optional)
  • ⅓ tsp cayenne
  • Salt
  • Mazola Corn Oil for frying

Bowl Components:

  • 225 g box of quinoa prepared according to package directions
  • Green Salad w veggies of choice
  • 100 g feta
  • ½ cup kalamata olives
  • 225 g prepared tzatziki
  • Half a lemon


Chicken Patties:

  1. Combine the ingredients for the chicken patties, if the mix is too wet then add additional breadcrumbs.
  2. Portion the ingredients into roughly 16 1.5 inch balls – can use a greased cookie scoop!
  3. Heat ¼ to ½ inch of Mazola Corn Oil in a pan and add the chicken, flattening each ball with the spatula
  4. Fry for 2-3 minutes on each side on medium heat until golden brown.

Assembling the bowl:

  1. Squeeze the lemon juice over the quinoa and season with salt and pepper.
  2. Add green salad, feta cheese, kalamata olives, tzatziki, and quinoa to the bowl.
  3. Add prepared chicken patties to the bowl.
  4. Assemble the bowl and dig in!
