Ingredients:
Poutine Gravy:
- 2 Tbsp cornstarch
- 2 Tbsp water
- 5 Tbsp unsalted butter
- 1/4 cup unbleached all purpose flour
- 300ml beef broth
- 150ml chicken broth
- Pepper, to taste
For Deep Fried Fries:
- 4 medium Russet potatoes
- 1L Mazola Corn Oil
- 1 – 1 1/2 cups white cheddar cheese curds
Instructions:
- Start by slicing potatoes into cylinders and soaking in water for a few hours then patting dry with a paper towel. Heat Mazola Corn Oil in a large pot until it shimmers and carefully add the potatoes. Fry until perfectly golden brown.
- While the fries are cooking, prepare the gravy by melting butter in a medium saucepan and whisking in flour. Cook for a few minutes then whisk in the broths. Whisk together the cornstarch and water then add the slurry to the gravy and whisk over low heat for 5 minutes or until thickened. Season with pepper to taste.
- Once fries are golden brown, remove and let excess oil drain slightly then transfer to a bowl, add cheese curds and pour the warm gravy over top.
