Roast Chicken with Herby Oil

Ingredients:
- 1.5-2 kg Skin on Whole Chicken
- 2 potatoes chopped into 1 inch thick chunks
- 2 carrots chopped into 1 inch thick chunks
Herby Oil:
- ⅓ cup Mazola Canola Oil
- ¼ cup fresh herbs finely chopped
- Zest of one lemon
- Salt & Pepper
Instructions:
- Preheat your oven to 375 F
- Mix the herby oil ingredients
- Place your chicken in a roasting dish and cover all over with the herby oil, making sure to get it under the skin on top of the chicken breast.
- Add your chopped veg to roasting dish
- Roast for 70 minutes and check for doneness with a thermometer (insert in the thickest part and confirm an internal temperature of 180F)
- Let rest for ten minutes and then carve and dig in!
Pro Tip: Don’t forget to save those delicious drippings to ladle over your chicken!
