Roast Chicken with Herby Oil

Ingredients:

  • 1.5-2 kg Skin on Whole Chicken
  • 2 potatoes chopped into 1 inch thick chunks
  • 2 carrots chopped into 1 inch thick chunks

Herby Oil:

  • ⅓ cup Mazola Canola Oil
  • ¼ cup fresh herbs finely chopped
  • Zest of one lemon
  • Salt & Pepper

Instructions:

  1. Preheat your oven to 375 F
  2. Mix the herby oil ingredients
  3. Place your chicken in a roasting dish and cover all over with the herby oil, making sure to get it under the skin on top of the chicken breast.
  4. Add your chopped veg to roasting dish
  5. Roast for 70 minutes and check for doneness with a thermometer (insert in the thickest part and confirm an internal temperature of 180F)
  6. Let rest for ten minutes and then carve and dig in!

Pro Tip: Don’t forget to save those delicious drippings to ladle over your chicken!
