Summer Vegetable Gnocchi
With Mazola® Canola Oil

Ingredients:
- 1 package gnocchi
- 2 tbsp Mazola canola oil
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 1 cup diced zucchini
- 1 cup corn
- 1 cup halved cherry tomatoes
- Juice from 1/2 lemon
- 2 tbsp pesto
- Salt and pepper to taste
Instructions:
- Cook gnocchi according to package directions. Drain and set aside.
- Add oil to a large skillet over medium heat. Add garlic and onion and cook about 3 minutes, stirring frequently. Add veggies and a pinch of salt. Cook until lightly browned.
- Add gnocchi, lemon juice, pesto and salt and pepper to taste. Stir to combine and cook until heated through.
- Serve with an extra squeeze of lemon if desired, enjoy!
