- 2 cups Mazola Corn Oil
- 1-1/2 to 2 pounds fresh sweet potatoes
- Salt to taste
- Heat oil to 350°F in large deep-sided skillet or deep fryer.
- Clean sweet potatoes and remove ends. Slice lengthwise into 1/4-inch thick slices. Stack slices and cut lengthwise into 1/4-inch strips.
- When oil is hot, fry sweet potatoes for 2 to 3 minutes or until lightly browned. Drain on paper towels. Sprinkle with salt and serve immediately.
Tip: for best results fry potatoes in several batches.
